This Loaded Queso Beer Dip Is. The. Best.

Are you looking for a hit appetizer for gamedays, entertaining, or just spicing up your dinner rotation? This loaded queso beer dip checks all the boxes for a dish that is quick, easy, delicious, and fun!

I was researching fun appetizer ideas for the Super Bowl and came across this delish recipe. Even though it’s a dip, it’s very filling like an entree and comes together so quickly. Here’s all you need!

Ingredients:

  • ½ pound lean ground meat (beef is best)
  • 16 ounces Velveeta cheese
  • 10.5 ounce can Rotel with green chiles
  • 15 ounces black beans (canned, drained and rinsed)
  • 1 cup pepper jack cheese, shredded
  • 1 cup pale ale
  • ½ cup red onion, diced
  • Salt and pepper to taste
  • Optional: cilantro for garnish

Suggestions for Dippers: This loaded queso beer dip goes great with so many options. Feel free to pair with your favorite tortilla chips, Fritos, pretzels, rolls, or veggies!

Substitution Suggestions:

  • For a slightly healthier option, you can always swap out ground beef for ground turkey.
  • For a vegetarian option, replace the meat with extra beans of your choice.
  • If sharing with kids, you can skip the beer and it’s still a delicious recipe!

Directions:

  1. Start by browning the ground beef in the skillet over medium heat.
  2. Remove excess grease.
  3. Add the salt and pepper, and pale ale.
  4. Reduce heat to medium.
  5. Add the cheeses and melt thoroughly.
  6. Add the Rotel, purple onions, and black beans. Stir well until heated through.
  7. Serve with cilantro garnished on top.

Tip: When browning the meat, never drain excess hot grease directly into your sink, as it can cause costly plumbing damage. Rather, drain it into a plastic container with a lid and discard in the trash. (I usually use a rinsed out cream cheese container.)

Perfect Presentation Platters:

Skillets: You can shop my 12-inch skillet from Amazon here! Walmart has a great 3-piece skillet set, or if you are making a smaller serving size, you can use this 6.5-inch skillet. If you’re making this for Valentine’s Day, you could also use this cute heart-shaped skillet!

For a smaller option, I’d also recommend this round wooden serving board, as well as this lighter Mango Wood board from Walmart. Finally, this marble and wood board is also a top favorite of mine.

Serving Bowls: If you’d rather serve the queso dip in a bowl, there are so many fun options. How cute is this scalloped ceramic bowl from Walmart?? (which is actually for plants but I love it in my kitchen!!) This wooden bowl or chic gold bowl from Target are also beautiful!

Salt and Pepper Holders: I absolutely love my marble pinch pots for salt and pepper, which you could fill with any spices you use regularly.

Can I Make This Ahead of Time?

This is a dish that is best served hot, so I’d recommend making it close to when you are ready to serve. To save time, you can have the meat cooked and stored in the fridge in a Tupperware container 2-3 days ahead of time.

Storying Leftover Loaded Queso Beer Dip

Store any leftovers in a Tupperware container and refrigerate. This should stay fresh for 3-5 days! Reheat in the microwave at 30-second intervals and stir when enjoying again.
