Cowboy Caviar

Cowboy Caviar is fresh, zesty, and made for poolside snacking, BBQs, and everything in between! Grab the chips and let’s make this the dip of the season 🥑🌽🌶️

Meet the ultimate summer scoop 🎉☀️

Ingredients

  • 1 can yellow corn
  • 1 can white corn
  • 2 cans black beans, drained and rinsed
  • 2 cans Rotel (drained slightly)
  • 1/2 red onion, finely diced
  • 4 green onions, sliced
  • 1 orange bell pepper, diced
  • 1/2 bunch fresh cilantro, chopped
  • 3/4 cup Italian dressing
  • 2 packets Sazón seasoning (like Goya with coriander & annatto)
  • Juice of 1 lime (optional but delish!)

Directions

  1. In a large bowl, mix yellow corn, white corn, black beans, Rotel, red onion, green onion, orange pepper, and cilantro.
  2. Add the Italian dressing and sprinkle in the Sazón packet.
  3. Toss everything until fully coated. Fold in lime juice if using.
  4. Chill for at least 30 minutes before serving.
  5. Serve with tortilla chips or use it to top grilled chicken, tacos, or salads!

Kitchen Links: I get asked all the time about the products in the background of my kitchen. Much of it is from MacKenzie-Childs, which I have slowly grown a collection of over the years! My favorites are my black and white checkered teapot, and the gray and white checkered utensil holder. I also have this enamel canister that you can find in smallmedium, or large.

Can I Prep This Cowboy Caviar in Advance?

Yes! You can definitely wash and slice the cilantro, bell pepper, and onions 2-3 days ahead of time to save time (Just store in a Ziploc Bag or Tupperware container and refrigerate.) You could also prep the whole recipe several hours or a day or two ahead of time. Just keep in a sealed container and refrigerate.

Storing Leftovers

Place any leftover Cowboy Caviar in a Ziploc Bag or Tupperware container and refrigerate, where it should stay fresh for several days. This is also delicious on a wrap or sandwich the next day!
