How to Make Amazing Guacamole Chicken Salad

This Guacamole Chicken Salad is one of my favorite lunches to eat during the week! ☺️You can serve this with pita chips, wrap it up in a tortilla or eat it straight from the bowl!

Chicken Salad Guacamole with Pita Chips

These fresh ingredients help to elevate this Guacamole Chicken Salad to something so delicious and refreshing. For a vegetarian option, feel free to skip the chicken!

Ingredients

  • 1 lb. chicken tenders, (or 2-2½ cups shredded chicken)
  • 2 large avocados, mashed
  • 2 stalks of green onion, sliced thin (use the green & white parts)
  • ½ – 1 jalapeno, deseeded & finely diced
  • ½ cup cherry tomatoes, diced
  • 2 tbsp cilantro, chopped
  • 1 tsp cumin
  • 2-3 tbsp lime juice (depending on how tangy you want it)
  • Garlic salt, to taste
  • Black pepper, to taste

Directions

This tasty recipe only needs 3 quick steps, which is music to my ears as I chase around three young kiddos!

  1. Add your shredded chicken, mashed avocado, green onion, jalapeno, tomatoes and cilantro to a large bowl and pour your lime juice over the top.
  2. Stir and season with garlic salt, cumin and pepper to taste.
  3. Serve immediately or let it chill in the refrigerator for 10-15 minutes before serving.

Perfect Presentation Platters

Here are some cute ideas for this Guacamole Chicken Salad, or any other dips you’d like to display!

Large Serving Bowls: I love this white floral bowl by MacKenzie-Childs, as well as this version in black. You could also go with this everyday bowl from her collection, which also comes in blue. For larger batches, you also can’t go wrong with this Wooden Salad Bowl (from Walmart at a great price!) or this option from JC Penney. This black stoneware bowl is also beautiful!

Individual Bowls: Walmart has these beautiful gray stoneware bowls with silver rims that are so elegant! I also love this black-and-white coordinating set or this colorful terracotta Spanish style.

White Platters: If you’d prefer a marble look, this white marble pastry board from World Market is beautiful. For a less expensive option, this faux white marble tray from Walmart is also a great choice!

Wooden Serving Platters: If you’d prefer to place the serving bowl on a wooden option that you could use year-round, I love this serving trivet, this round black serving board, this mango wood serving board, or this rectangular serving board.

Kitchen Links: I get asked all the time about the products in the background of my kitchen. Much of it is from MacKenzie-Childs, which I have slowly grown a collection of over the years! Can I Make This Ahead of Time?

This Guacamole Chicken Salad is one of those dishes that is best prepared within an hour of serving so the avocados don’t darken and stay fresh. Since it comes together so quickly, it’s still a low-stress dish that’s perfect for entertaining or any meal during the busy week.

Storing Leftover Chicken Salad Guacamole

Keep any leftovers in a sealed Tupper Ware container or cover the bowl tightly with Saran Wrap. Store in the refrigerator, where it should stay fresh for 1-2 days.
