This tator tot breakfast casserole is the perfect comfort food for a chilly day! You can also prep it in advance to help make your mornings as smooth as possible (this recipe had me at “make-ahead.”) 🙂
It’s easy for my family to get in a breakfast rut of the same cereal, frozen waffles or oatmeal. For a special breakfast treat, this tater tot breakfast casserole is amazing and so quick to prepare!
You only need less than 10 ingredients, but this has so much flavor!
Supplies Needed: Large skillet, 9×13 inch baking dish, one large mixing bowl
For a vegetarian option, swap the breakfast sausage for any preferred vegetable such as peppers, sun dried tomatoes, celery, or onions. For a healthier version, you can use turkey sausage and less cheese.
Note: If you are heating the tator tot breakfast casserole after freezing, let it thaw completely at room temperature (approximately 3 hours) before baking, then heat as directed above.
I’d recommend making this tater tot breakfast casserole the night before or one day in advance. Just cover and refrigerate until you are ready to pop it in the oven to help make your mornings as stress-free as possible. You can also freeze it for two-three months.
Cover the tator tot breakfast casserole with Saran Wrap or store in Tupperware and refrigerate. This should stay fresh 2-3 days; just microwave at 30 second intervals to reheat.
This tater tot breakfast casserole doesn’t need anything fancy! Here’s what I used:
Baking Pan: I used this white stoneware baking pan from Target that I get so much use out of!
Plaid Plates: There are so many options you could do, such as these plaid dinner plates, these tartan salad plates, or these plaid dessert plates (I especially love that these are an assortment of both red and green plaid.) For a bit more of an investment, Pottery Barn also has a pretty plaid stoneware set.
