Sheet Pan Cheeseburger Quesadilla

This Cheeseburger Quesadilla is made in a sheet pan, making it the perfect easy appetizer or main course for a crowd or party! Bursting with lots of flavor, every bite is full of melty cheese and my favorite Big Mac burger sauce.

I’ll be the first to admit, I love a good cheeseburger, and better yet even a Big Mac. My family loves making sheet pan quesadillas for parties with friends, and one day I thought why not make the filling inspired by the flavors of a burger? Ever since, this Cheeseburger Quesadilla has been one of the most highly requested recipes and I understand why – it’s truly delicious!

It’s so much easier to serve to a crowd than individual burgers (with less mess too!). Just layer flour tortillas, seasoned ground beef, lots of cheese, and my special burger sauce for the perfect crunchy bite. Leanna’s Tip: Make sure you buy burrito-sized flour tortillas so you can layer them nicely over the sheet pan to hold the filling.

Ingredients

  • Large flour tortillas: You want the burrito sized here to make sure you can cover the whole sheet pan before adding the filling.
  • Lean ground beef: The main protein for our cheeseburger quesadillas of course. Buy lean here to avoid having the recipe come out greasy.
  • American cheese: All the melty, cheesy goodness of a regular cheeseburger put into the quesadilla.
  • Shredded cheddar cheese: Additional cheese to make the perfect filling consistency.
  • Onion: A key component to any cheeseburger.
  • Dill pickle chips: We love pickles on our burger, so we had to add them here too.

Special Burger Sauce Ingredients:

  • Mayonnaise: You can also use light mayo. It’s the creamy base that adds rich flavor.
  • Ketchup: Adds a hint of sweetness.
  • Mustard: Gives a hint of tang to every bite.
  • Pickle relish: Adds sweet pickle flavor.
  • Apple cider vinegar: A little goes a long way. The acid rounds out all of the creamy and sweet flavors.
  • Garlic powder: Infuses each bite with garlic flavor.
  • Onion powder: Adds some of that onion sweetness.

How to Make a Cheeseburger Quesadilla

  1. Preheat oven to 425°F. Spray pan with cooking spray.
  2. Cook ground beef and set aside.
  3. Place 6 tortillas around the edges of the pan. Lay American cheese over the tortillas, next spread the meat mixture. Add pickles and diced onion.
  4. In a small bowl, combine sauce ingredients and drizzle over the quesadilla. Sprinkle cheddar cheese on top of the sauce mixture.
  5. Place the last two tortilla in the center and fold the tortillas towards the middle.
  6. Place the bottom of a sheet pan on top (to hold tortillas in place) and bake for 20 mins.
  7. Cool slightly before cutting and serve with sauce for dipping.

Expert Tips

  • Be sure your tortillas are overlapping on the pan nicely. This will guarantee that none of that delicious burger filling will fall out when you go to cut and eat the quesadillas.
  • Don’t over-bake the cheeseburger quesadilla. Shockingly these are easy to cook too long and when that happens, the tortilla becomes a little too crunchy.
  • Feel free to serve the sauce on the side. If you have picky eaters, this is often my recommendation to keep the cheeseburger plain and simple.
  • Make sure you place a second sheet pan on top of the assembled quesadilla while it bakes. This holds everything in place and also helps with browning the top.
  • Allow the quesadilla to cool slightly before slicing and serving. This will make it much easier to cut and eat once the cheese has set.

Make-Ahead Tips

Make this Cheeseburger Big Mac Quesadilla even easier by prepping key components ahead of time. Preparing the filling early not only speeds things up at dinnertime, but also helps the flavors deepen for an even better “Big Mac” taste.

• Prep the filling in advance: Cook the ground beef mixture 1–2 days ahead and store it in an airtight container in the fridge. Reheat before assembling your quesadillas.
• Chop toppings early: Shredded lettuce, diced pickles, and onions can be prepped a day in advance and stored separately.
• Mix the Big Mac sauce: The sauce tastes even better after sitting, so whisk it together up to 3 days ahead.
• Assemble right before cooking: For best texture, don’t build the quesadillas until you’re ready to crisp them — this keeps the tortilla from getting soggy.
• Freezer-friendly option: Freeze the cooked meat mixture (not the assembled quesadillas) for up to 3 months to make future weeknights extra easy.

Storage

Store any leftovers in an airtight container in the fridge for up to 2 to 3 days. This should stay fresh in the fridge for about 2-3 days. We like to reheat in the microwave, oven, air fryer, or just eat the leftovers cold!

You can assemble the quesadilla in advance and keep it in the fridge covered with plastic wrap for up to 2 days before popping it into the oven to bake.

Absolutely! You can definitely cook the meat or prepare the entire thing about two days in advance and store in the refrigerator. (You can wrap plastic wrap tightly around it so it stays fresh and in place.)

We love to add shredded rotisserie chicken or just veggies and beans!

Can I use other types of cheeses in a quesadilla?

Yes, we love Colby Jack for it’s flavor and meltiness, but we also have used mozzarella, cheddar, American, pepper Jack, and even Swiss!
