How to Make a Delicious Tortellini Caprese Salad

This Chicken and Tortellini Caprese Salad is so fresh, delicious, and takes under 30 minutes to put together! It makes a great lunch, dinner, or side dish for entertaining.

I’ve made so much soup and comfort food this winter, but this salad was such a fresh (literally!) change!

Ingredients

I add grilled chicken to my recipe for some extra protein, but you can definitely make this without chicken for a vegetarian option. Here’s what else you’ll need:

  • Approximately 8 oz Grilled Chicken
  • 1 package (8 oz) Mozzarella Pearls
  • 1 package (about 18 oz) Cheese Tortellini
  • 1/3 cup Olive Oil
  • 2 tablespoons Balsamic vinegar
  • 1 small package (10 oz) cherry tomatoes, chopped
  • 3 garlic cloves
  • 1 cup fresh Spinach
  • 1/4 cup fresh basil
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon salt and pepper
  • Optional: Balsamic Glaze drizzled on top before serving

Substitution Suggestions

  • Olive Oil: For a healthier option, you can less Olive Oil and add just enough for your taste preferences. If you don’t have Olive Oil on-hand, you can use vegetable oil as well.
  • Mozzarella: If you can’t find Mozzarella pearls, shredded mozzarella cheese also works.

Directions

  1. Cook the tortellini as directed on the package in a large pot. Drain the hot water and rinse with cold water before transferring to serving bowl.
  2. Add the tomatoes, spinach, basil, mozzarella pearls, and garlic.
  3. Add the balsamic vinegar, oil, Italian seasoning, salt, and pepper. Stir/toss well to combine.
  4. Chill in the refrigerator until ready to serve. Stir/toss before serving to redistribute the oil and seasoning.
  5. Optional: Drizzle with Balsamic glaze just before serving.

Perfect Presentation Platters

Chopping Board: I used wooden chopping boards almost daily! Some fun options are this marble and wood option from World Market, this white striped wooden board from Kirklands, this mango wood board from Target, and this marble and wood rectangular tray from JC Penney. I also use this MacKenzie Childs Check-Chop Board all the time if you’re looking for a higher-end option.

Salt and Pepper Holders: I absolutely love my marble pinch pots for salt and pepper, which you could fill with any spices you use regularly.

Large Serving Bowls: You also can’t go wrong with this Wooden Salad Bowl or this White Ceramic Bowl (both from Walmart.) For a higher-end choice, I also love this everyday bowl by MacKenzie Childs.

Individual Bowls: Walmart has these beautiful gray stoneware bowls with silver rims for a great price! I also love this black-and-white coordinating set or this colorful terracotta Spanish style.

Can I Make This Ahead of Time?

If prepping in advanced, I’d recommend not preparing it more than one day in advance, so it doesn’t get soggy. Be sure to stir before serving to redistribute the oil and seasoning.

Storing Leftover Tortellini Caprese Salad

Store in a Tupperware container and refrigerate, where it should stay fresh for 3-5 days. Shake well before eating again.
