The Best Easy Greek Pasta Salad
This Greek Pasta Salad is easy and delicious and perfect for summer BBQs or for a light dinner meal! This recipe was adapted from SkinnyTaste, which is my favorite place to find healthy meals.
I love Pasta Salads! They are so easy to make and are always perfect to make for a crowd. This recipe is a summer favorite as it is light and fresh! It is filled with cucumbers, grape tomatoes, feta cheese, cucumbers, and tossed in a homemade greek salad dressing.
Easy Pasta Salad Recipe
This recipe contains noodles but you can also change it up by substituting it with quinoa, orzo or tortellini! And want in on a little secret? If you make this simple dish a tad bit ahead of time, the flavors and dressing stand out even more! The noodles and veggies have more time to marinate and it makes such a big difference in the flavor! As a family we will enjoy these leftovers for days after!

Whats in a Greek Pasta Salad?
- PASTA: for this pasta salad, I used wheat rotini pasta. But you can pick your favorite!
- CHEESE: crumbled feta cheese really brings the textures of this pasta salad together.
- TOMATOES: cherry tomatoes are perfect for pasta salad! I like to use red and orange for more color!
- CUCUMBERS: make sure you dice the cucumber to make it nice and small.
- OLIVES: sliced Kalamata olives are delicious in this salad but you can also use black olives if you prefer.
- ONION: purple onion works best in this recipe!
Ingredients
- 3 tbsp red wine vinegar
- 2 tbsp fresh lemon juice
- 1/3 cup olive oil
- 1/2 tsp garlic powder
- 1 tsp oregano
- 1/2 tsp kosher salt
- 16 oz pasta rotini wheat or gluten-free
- 1/2 cup halved pitted kalamata olives, plus 2 tablespoons brine
- 1/3 cup red onion, diced
- 3 cups (from 1 large) cucumber, diced
- 1 pint cherry tomatoes, halved
- 1 orange bell pepper, diced
- 1/2 cup feta cheese, cubed
Directions on how to make the best greek pasta salad
- Cook the pasta according to package directions.
- Drain and rinse with cold water
- Meanwhile, in a large bowl, combine the dressing ingredients; olive oil, red wine vinegar, lemon juice, garlic powder, oregano, salt
- Add the olives, red onion and brine from the olives and stir to combine.
- Add in the pasta with the cucumber, tomatoes and bell pepper and toss well.
- Add the cheese just before ready to serve.
