How to Make a Delicious Cucumber Avocado Salsa
This Cucumber Avocado Salsa is so fresh, filling, and flavorful! I love making a double batch and then using leftovers to spread over sandwiches and wraps to spice up my lunches!
Ingredients
I love how the fresh ingredients complement each other so nicely. Each bite is so satisfying and delicious! Here’s all you need:
For the Base:
- 1 large cucumber peeled, seeded, and finely chopped
- 1 avocado, finely chopped
- 1 medium tomato, finely chopped and seeded
- ¼ cup red onion, finely chopped
- 2 – 3 tablespoon fresh cilantro, finely chopped
- 1 garlic clove, minced
For the Sauce:
- ¼ cup reduced-fat sour cream
- 1-½ teaspoon lemon juice
- 1-½ teaspoon lime juice
- ¼ teaspoon ground cumin
- ¼ teaspoon salt
- Tortilla chips
Dippers: Tortilla chips, crackers, pretzels, or any other preferred snacks for dipping.
Directions
- In a medium bowl, combine the first base ingredients and gently toss.
- In a separate bowl, combine the sauce ingredients: sour cream, lemon juice, lime juice, cumin and salt.
- Pour over cucumber mixture and gently toss to coat.
- Serve with tortilla chips.

Kitchen Links: I get asked all the time about the products in the background of my kitchen. Much of it is from MacKenzie-Childs, which I have slowly grown a collection of over the years! I also have this enamel canister that you can find in small, medium, or large.
Can I Make This Ahead of Time?
I’d recommend making this within a few hours of serving time so the avocados stay fresh. Store in the refrigerator until you are ready to serve.
Storing Leftover Cucumber Avocado Salsa
If you have any leftovers, store in a Tupperware container or cover with Saran Wrap and keep in the refrigerator. This should stay fresh for 2-3 days and is so tasty on a sandwich or wrap!
