How to Make a Baked Bagel Egg in the Hole

Baked Bagel Egg in the Hole

This is one of those recipes that looks fancy and complex, but it actually simple and low stress. It would be a great choice for brunch, baby or wedding showers, or a delicious way to switch up your usual breakfast rotation.

Ingredients

Baked Bagel Egg-In-The-Hole:
-6 tablespoons salted butter, melted
-4 everything bagels, halved
-8 medium eggs
-Kosher salt and freshly ground black pepper
🍳Hollandaise:
-2 sticks (16 tablespoons) unsalted butter
-3 large egg yolks
-Juice of 2 lemons, plus more if needed
-1/2 teaspoon cayenne pepper
-Kosher salt
🍳Garnish:
-8 ounces smoked salmon, sliced
-1/4 cup diced red onion
-2 tablespoons chopped chives
-2 tablespoons capers, drained

Directions

  1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and brush with 2 tablespoons of the melted butter.
  2. Using a 2-inch round cutter, make the center of each bagel half larger. Brush the cut side of the bagels and bagel cutouts with 2 tablespoons of the melted butter.
  3. Place the bagels cut-side down on the prepared baking sheet and brush with butter. Crack an egg into each hole. Season with salt and pepper. Bake for 11 to 14 minutes, depending on how you like your eggs.

Hollandaise Sauce:

  1. In a small saucepan, melt the butter until sizzling.
  2. Put the egg yolks in a blender and turn on a low speed to allow them to combine, slowly begin pouring the hot butter into the blender. Once all the butter is in, add the lemon juice. Add the cayenne pepper and a pinch of salt. Cover with foil until serving.
  3. Transfer the bagels and cutouts to a serving platter. Add the salmon, garnish with the red onions, chives and capers. Serve with the warm hollandaise.

Perfect Presentation Platters

Can I Make This in Advance?

Prepping the bagels by cutting them in advance is definitely a time saver! Wait to add the eggs and bake until you are ready to serve so the bagels don’t get soggy and the eggs stay fresh. You could also prep the hollandaise sauced in advance if needed and store in the refrigerator, but you’ll want to warm it up in the microwave and stir well before pouring it over the bagels.

Store any leftovers in a Tupperware container and refrigerate. These should stay fresh for 2-3 days!
