How to Make the Cutest Jack-O’-Lantern Stuffed Peppers
These Jack-O’-Lantern Stuffed Peppers are sure to be a Halloween hit! Made with orange bell peppers and fresh Southwestern flavors, they are equally delicious and adorable!
It was also super easy to cut the little Jack-O’-Lantern face!
Ingredients
- 1 lb ground beef
- 8 orange bell peppers
- 15 oz Corn kernels
- 3 cloves garlic
- 10 oz Rotel tomatoes with green chiles
- 15 oz S black beans
- 1 packet Taco Seasoning
- 1 cup white long grain rice
- 8 oz Mexican blend cheese, shredded
Directions:
- Clean and cut out peppers, place them on a plate with a damp paper towel on top of them and microwave for 6 minutes. Remove and set aside.
- Make Rice according to package instructions and set aside.
- In a large skillet, brown ground beef until cooked thoroughly and add in taco seasoning according to instructions. Once cooked, add in corn, green chilis, and black beans. Stir in prepared rice.
- Fill bell peppers, top with cheese, and bake in 350 F oven for 10-15 minutes or until peppers are at desired tenderness. Use extra filling in tortillas or with tortilla chips.

Yes! You can make these 2-3 days in advance. Keep them in a sealed Tupperware Container and refrigerate.
Storing Leftovers
Store any leftovers in the refrigerator in a Tupperware container or Ziploc bag.
